Recipe — Harvest Pecan Delight

Oklahoma’s 100 degree days are over for the year (hurrah!) and it’s cool enough to actually turn on the stove.  I’ve been trying out low glycemic recipes to share with you, and I have a winner for today.  It works as a breakfast or as a delicious dessert.

 Harvest Pecan Delight

  • 1 tsp. organic virgin coconut oil (This stuff is GOOD for you.  More about that in a later post.)
  • 1/3 cup chopped pecans
  • 1/2 chopped apple
  • 1/2 chopped peach
  • 1 tsp. cinnamon
  • natural sweetener to taste (I used 1 tsp. Sun Crystals)

Melt the coconut oil over medium heat and add pecans. Stir until heated through.  Add the apple and peach and continue to stir.  Sprinkle with cinnamon and natural sweetener.  Cook until just hot through and tender.  If you like, you can top with yogurt if you are fixing this as a breakfast or add a dollop of whipped cream, if you are eating it as a dessert.

One serving makes a hot, hearty breakfast that will hold you until lunch.  For 360 calories, it provides 4.1 grams of protein and 3.8 grams of fiber, as well as 14% of your daily requirements for Vitamin C.  Best of all, it has a low glycemic response.  Keeping your blood sugar steady and your insulin response on an even keel is one important key to healthy weight loss.

For a dessert, you might want to share and just eat half for 180 calories — particularly if you add the whipped cream.

God has given us plenty of good things to enjoy.  No need to feel deprived!
