And as one who has relatives ranching things like bison and buffalo as well as beef, let me assure you that such meat is *so* much tastier than what you usually get in the store. The other alternative is to buy a deep freeze (standing freezer, whatever your neck of the woods calls it).

Did this a couple of years ago, split a side with my in-laws. Except that my wife got a little leery-freaky about using the neck bones for stock [she has this innate fear of catching BSE] it was a really good deal all around. It came out to something on the order of $2.37 a pound completely processed, which I thought was really good pricewise.

We do this, and helpful for you on-off dream of a left-right crunchy fusion, Rod, we do it with a group of lefties, including a Marxist (who nevertheless pays his part!).
