Here’s my recipe (I use the term loosely) for a delicious, fiber-packed breakfast. It’s sweet, creamy, crunchy, and healthy in every bite. Good morning!
Peanut Butter Banana Crunch Toast
Toast a slice of whole-grain bread (I use 12-grain).
Slather with creamy peanut butter while the toast is still hot (I use natural peanut butter).
Slice a banana, nestling each piece into the now-melty peanut butter (I usually fit 9 banana slices on the toast).
Sprinkle your favorite granola mix over the top (1-2 teaspoons should do it, just enough for the crunch factor).
Sink your teeth in!

This sounds absolutely delicious. Most of the ingredients can be found here, in Scotland, except granola mix. Could you suggest an alternative? Thanks. Elizabeth Benjamin

I also do this and I add a good sprinkle of cinnamon and a few raisens. I am glad to know that someone else thought of this too.

Alton Brown, from FoodNetwork.com, has an easy Granola recipe that you should have the ingredients in Scotland for, Elizabeth Benjamin:
3 cups rolled oats
1 cup slivered almonds
1 cup cashews
3/4 cup shredded sweet coconut
1/4 cup plus 2 tablespoons dark brown sugar
1/4 cup plus 2 tablespoons maple syrup
1/4 cup vegetable oil
3/4 teaspoon salt
1 cup raisins
Directions
Preheat oven to 250 degrees F.
In a large bowl, combine the oats, nuts, coconut, and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl. Add raisins and mix until evenly distributed.

Sounds yummy but what are the calories? I want to loos 10 pounds. I have recently started to eat toast with peanut butter with a small amount of honey and it does seem to hold me all day

To elisabeth inScotland regarding not having granola in Scotland . It can be easily made and she can control the sugar ! Sprinkle some large flake oatmeal ,dried nuts and fruits of your choice on an oven proof pan or small cookie sheet, spray not fat cooking spray over it ,then sprinkle cinnamon ,nutmeg or whatever flavours you want ,this is when you add sugar if you want..sprinkle just a pinch over all and stir or mess it up on the tray. or mix a bit of honey and water and stir it in or scrunch it up with your fingers after taking it out of the oven..set on middle rack of the oven at about 350 and watch it closely….it will burn quickly..when the oatmeal turns a golden brown and it all scents of toasted..take it out…use it on whatever you like..yogurt ,fruit dishes etc..will keep in an airtight container in the freezer .

definately sounds good… but, we do need to know the calories…fat..carbohydrate..and protein ratio… even though peanut butter is high in calories… it has the good fat your body needs to fight fat…. and all natural peanut butter, or almond butter is the best…. update us with information… thanks

Now thats just not a good combination to me. Bananas by their selfs and peanut butter by its selfs are good,but mixing them together not good to me. I’ve tried it when I was a kid, when my mom and great aunt would fix it. To me it had a bad taste to it. Why spoil the taste of the two by mixing them. I guess to each their on taste.

Just use fresh ground almond butter and a slice of sprouted bread … that should cut the calories, fat and cholesterol

My idea of a healthy breakfast is egg whites, spinach, garlic, fresh mushrooms, spinach, some farmers low fat cheese..if I want some sweet, I’ll have a 1/4 blueberries on the side.
I don’t know how I got signed up for this thing..and sorry to use your thread as a vent, but I have seen NOTHING healthy associated with this site to date….The recipe above is the reason second to low/no exercise amercians are FAT..WOW!~

My problem is: I crave MEAT at breakfast! And the only ones I seem to find low fat are cooked ham, or canadian bacon, but are full of SALT! Can anyone suggest something? Eggs are not the same! Thanks!

I tried this recipe this morning and it was fantastic. Bananas are all the rage when it comes to a healthy breakfast and starting your day with some carbs and protein and yes even some fat is what all the gurus who really know their stuff are touting. This is great for people that are truly in the know. Keep on sharing because your recipe was terrific. I have found your recipe to be extremely satisfying. Thanks so much for sharing,

Wow I tried that and it tis a-ok. Something different..grt taste..healthy and I found that even lunch time I am not dying for my lunch.. I eat like a lady..not a piggy-wig..eat to live..not live to eat and this one was a winner..thanks for the tip folks.

Cindy: Try pork chops for breakfast. They’re leaner than they used to be. Put a really thin chop in a dry non-stick skillet. It will cook faster than bacon. Have eggs with it if you like.

I have a difficulcy with chewing when I am just awake LOL
My kids and me prefer this for breakfast :
Put in a blender milk, 2 teaspoons honey, a kiwi in pieces, 5 strawberry’s or other fruit, and a banana. Add some nuts too, like walnuts en go blender it! This breakfast-milkshakes has all healthy ingrediënts we need to start the day energetic with.

As for the calorie question, here’s how it breaks down for me in the calories/fat/fiber/protein ratio:
Bread: 110/1.5/1/4
Peanut Butter: 100/8.5/1.5/3.5
Granola: 100/1.5/2/3
Banana: 80
So calorically speaking, we come in at just under 400. If you’re trying to lose weight, that may be too high – but keep in mind that for me anyway, this breakfast keeps me 100% satisfied until it’s time for lunch. No mid-morning snack cravings!
Also, all that protein and fiber help your body metabolize and otherwise do its job.
Meanwhile, I love “Your Name’s” breakfast smoothie. Sounds fabulous, I’m definitely going to try it!

Instead of the whole grain bread, I use a whole wheat English Muffin, top with peanut butter, banana slices and honey. It is very satisfying.

I tried that when I was on a diet. It was called heart diet. It was really good.I not have to put sugar in my coffee. I did not try it with granola that should be good. Will try that. Thank-you
