Cooking With Christian Music: Yellow Cavalier’s Rockin’ Muffins

Vocal quartet Yellow Cavalier released their debut EP this past May, and in this week’s Cooking with Christian Music feature, group member Caleb Grimm offers what he says is a delicious recipe for his all-time favorite food, Yellow Cavalier’s Rockin’ Muffins!Yellow Cavalier’s Rockin’ Muffins4 Cups Flour2 tsp. baking soda½ tsp. cinnamon2 Cups of Sugar1 Cup of butter – softened2 eggs2 Cups Applesauce 2 Tbsp. Vanilla¼ Cup Raisins½ Cup shredded Coconut1 ¼ Cup Fresh Cranberries – previously frozen – NOT THAWED1 ¼ Cup Walnuts or PecansGrease a muffin pan or line with paper muffin cups . Heat oven to 350 degrees. In large bowl combine first three dry ingred. (flour, soda, cinnamon) Set aside.In 2nd bowl cream butter and sugar. Beat in eggs, applesauce, and vanilla. Stir into dry ingredients until well blended. Gently fold in nuts, coconut and raisins. Last – fold in frozen cranberries. (freeze a bag of loose fresh cranberries and do not sweeten or thaw).Fill muffin cups ¾ full. Bake at 350 degrees for approx. 20-25 minutes or until muffins test done with toothpick in center. Cool just 10 mins in pan then remove to wire rack.Makes about 3 dozen muffins. I really enjoyed this video and this song. These guys seem really “down to earth.” I pray they will use their talents for the Lord.
