Vocal quartet Yellow Cavalier released their debut EP this past May, and in this week's Cooking with Christian Music feature, group member Caleb Grimm offers what he says is a delicious recipe for his all-time favorite food, Yellow Cavalier's Rockin' Muffins!
Yellow Cavalier's Rockin' Muffins
4 Cups Flour
2 tsp. baking soda
½ tsp. cinnamon
2 Cups of Sugar
1 Cup of butter - softened
2 eggs
2 Cups Applesauce
2 Tbsp. Vanilla
¼ Cup Raisins
½ Cup shredded Coconut
1 ¼ Cup Fresh Cranberries - previously frozen - NOT THAWED
1 ¼ Cup Walnuts or Pecans
Grease a muffin pan or line with paper muffin cups . Heat oven to 350 degrees. In large bowl combine first three dry ingred. (flour, soda, cinnamon) Set aside.
In 2nd bowl cream butter and sugar. Beat in eggs, applesauce, and vanilla. Stir into dry ingredients until well blended. Gently fold in nuts, coconut and raisins. Last - fold in frozen cranberries. (freeze a bag of loose fresh cranberries and do not sweeten or thaw).
Fill muffin cups ¾ full. Bake at 350 degrees for approx. 20-25 minutes or until muffins test done with toothpick in center. Cool just 10 mins in pan then remove to wire rack.
Makes about 3 dozen muffins. That'll serve about 2-3 dudes (just kidding...kind of...).
