Cooking With Christian Music: Paula Parker's Chocolate Cup Cakes

MikeandPaulaParker.jpgIn this week's Cooking With Christian Music feature, we go off the stage and behind the scenes, with music writer (and my dear friend) Paula Parker.

Paula (pictured here with her husband and fellow writer, Mike) is one of those folks who covers entertainment for magazines and websites, in addition to dozens of other interesting and creative things she's involved in. While music fans see the artists on stage, there are dozens of people behind the scenes writing bios, interviewing artists for articles, and doing other invisible stuff that keeps the industry running. Oh, and did I mention that she's a chocoholic? That explains her recipe, for Chocolate Cup Cakes:

Chocolate "Cup" Cake
from Christian music writer Paula Parker

Spray cooking spray inside of a large microwaveable soup mug. Use a large microwaveable soup mug or something of equal size. Everything is mixed in the cup.

Add:
4 Tbsp all purpose flour
4 Tbsp sugar
2 Tbsp cocoa
Mix well...

Add:
1 egg
Mix well...

Add:
3 Tbsp milk
3 Tbsp oil
Splash of vanilla
Mix well...

Add:
3 Tbsp chocolate chips (or peanut butter, mint, white chocolate, whatever)

Microwave on High for 3 minutes.

You can eat it directly out of the mug or turn it out onto a plate. The toppings are infinite; chocolate syrup, ice cream, whipped cream, raspberries, caramel sauce....

This will serve 2 normal people or 1 woman suffering from PMS.

In that first step is that supposed to be two different types of sugar or is that just an odd way to say 6 TBS of sugar?

I'm checking right now! I didn't even catch that. I suspect one is white and one is brown.

The recipe should read 4 Tablespoons of sugar and 2 Tablespoons of Cocoa. I was sending out mutilple recipes at the time. You could also chalk it up to the lack of chocolate that day.

And I should have checked. I need the chocolate today, so I would have found it before Rob, who clearly needed it more than us! LOL
