I’ve been a little underwhelmed thus far by my new (if you consider something from good-will new) bread machine. The bread smells great but it looks funny and has an odd texture. I’ve come up with one recipe, however, that I love. I won’t post a picture, because that might dissuade you from trying it.
Cornmeal Wheat Bread
1.5 tsp yeast
1 c white flour
1 c whole wheat flour
1 c stone ground corn meal
1 tsp salt
1 c warm water
1/4 c oil
1 egg
2 T molasses (I use blackstrap)
follow the directions on your machine…..I add 2 T of gluten if I’m not using bread flour.

I think the best use of a bread machine is to make dough. It’s a great way to make perfect challah dough, then forget the weird shape of the bread machine. Just use it for dough, then shape the loaves yourself and bake them. Works like a charm…

If I’m just going to make dough, I can use my kitchen aid with the dough hook, which is what I used to do before I bought a bread machine, when I stopped doing it by hand. It’s not really worth lugging R2D2 out of the garage for dough alone.
