Maybe the mohel agreed because she wanted the baby circumcised and wanted to protect his privacy. Therefore, rather than try to “smuggle” him into a hospital for the procedure, a mohel can come to the home and perform it.
She obviously was very careful about keeping Louis under wraps until she was ready to deal with the media, and I’m sure the circumcision was just another detail to many that she dealt with.

Even if Bullock was “half-Jewish”, observant Jews would consider her Jewish if her mom was the Jewish parent. She would not be the first non-observant Jew to give a baby boy a bris and want to raise her kid Jewish, for reasons of identity, if nothing else.
