Ah, Second Corinthians. One of the most formative classes I had in seminary was Murray Harris' class on 2 Corinthians, and I've paid attention to the commentaries ever since. I begin with C.K. Barrett because I learned so much from him in our class: The Second Epistle to Corinthians
Then I go to my teacher's, Murray Harris', newest and full-length commentary: Second Epistle To The Corinthians (New International Greek Testament Commentary)
Following Harris, I move along the shelf to Victor Furnish's fine commentary in The Anchor Bible: II Corinthians
Then to Ralph Martin's Word commentary: 2 Corinthians: Revised (Word Biblical Commentary)
Finally, I now finish off with Margaret Thrall's ICC volume: 2 Corinthians

I think Furnish's (say that outloud 5 times fast) is often overlooked. Garland's is one of the better NAC volumes.

In addition to a few that you have already mentioned, I would add David Garland's 2 Corinthians commentary (New American Commentary) and Ben Witherington's CONFLICT AND COMMUNITY IN CORINTH.
Also, Frank Matera's volume in the New Testament Library series, which is quite good.
I would echo danny and Jim and mention Garland's volume in NAC.
