Iced Coffee Saved Me! (and a recipe)

I have no sense of direction, whether on the road to Sveltesville, or not! It’s a fact and official.

Suffice to say, I got turned around too many times today (once!), to find my way back to my hotel room. After walking for over half an hour (which is truly a long time in 102 degree heat) on a dusty, dry Arizona highway, I saw the most beautiful sign that read: ICED COFFEE.

Tongue hanging to the floor, hair flat (there’s no humidity here, my curls are almost non-existent!), and barely audible, I ordered me the largest iced coffee they could manage.

I was saved! By the iced coffee and the gentlemen who pointed me in the right direction.

And woo hoo ... here’s more good news for those of us who enjoy a good cuppa’ Joe.

- According to a 10-year study conducted by the University of Bristol, scientists have found that a cup of coffee can sharpen your attention.

- Some reports indicate that coffee may reduce the risk of colon cancer by 25%, because it helps to keep you regular. (No need for prunes!)

- Coffee may reduce the risk of bladder cancer, skin cancer, diabetes, Parkinson’s disease, and coffee may reduce the risk of developing kidney stones.

- Theophylline, a compound in coffee, acts as a bronchodilator. For those with asthma, drinking coffee can lessen symptoms by 25 percent.

- Coffee increases your alertness, which may, in fact, allow you to experience the joie de vie!

Now, don’t go hog wild guzzling gallons of the stuff, but it looks as though a couple of cuppa Joe's (under 2 cups if you’re pregnant) won't do you any harm!

Righteous Recipe: Iced Chocolate Coffee (oh chocolate, we love you, so!)
2 servings

Ingredients:
1 cup uber-strong brewed coffee, cooled
1/2 cup 2% milk (or 1% or fat-free … you decide)
1/4 cup chocolate sorbet, light (Sharon’s is really good and low in calories and fat)
Sweeten to taste.
Ice cubes (as many or as few as you want).

Instructions: Toss in all ingredients into blender, plus a couple of coffee ice cubes. Blend on high speed until smooth. Pour into 2 tall glasses and serve immediately. And then … for the pièce de résistance throw in a few coffee ice cubes!

Here’s how you make them! For big-time-summer-fun, make ice cubes out of coffee and for a cheap thrill toss in a couple of coffee beans into each compartment on your ice tray.

I've got another recipe for Iced Coffee, that's easy, tastes yummy, and beats the daylights out of over-priced coffee chain's versions. In a blender, combine 1 c. milk (skim, 1%, whatever's in the fridge, the lower the fat the more it will foam)1 cup of cold strong coffee, 2 packets of low-calorie sweetener of choice, and 1/2 c. ice cubes. Coffee cubes would be great! Blend until mixed and foamy. Pour into a large glass, over ice, and sprinkle with cinnamon. Since hubby and I both love this, we hafta make a double batch. I'm thinking about adding some cocoa to make a tasty mocha-ccino.
