Christmas Diet Recipe: Sweet Potato Whip It

Thanksgiving? Without sweet potatoes? Perish the thought!!!

For me, Sweet Potatoes are a Thanksgiving MUST!
My sweet potato roots go back to my childhood when my mother whipped up the "marshmallow and pineapple casserole thing" each and every Thanksgiving. I loved it! Especially when the marshmallows burnt just a tad. Oh My!

I snuck into the kitchen on more than one Thanksgiving, and I picked off those burnt babies. I pleaded "innocent" while covered in white goo. Even though I made a mess of the dish, my mother was pleased that I liked it! She was and still is a softy! Oh, sorry, I digress.

As you can see, it's not just the wonderful taste of sweet potatoes, or the nutritional value that entice me, bit rather it's the tradition, the heart hook, the link to mother and family.

However, the casserole of my youth is definitely a tad too rich for my current set of taste buds and definitely NOT an Our Lady of Weight Loss approved item.

I have, however, come up with an even better, more delicious Sweet Potato Dish. Truly!!! Fantastic! A 5 YUM Dish!

Sweet Potato Whip It
Serves 8

Ingredients:
6 medium potatoes
3 tablespoons of butter (yes, butter - but 3 tablespoons for 8 people; not a tragedy)
1/2 cup of 1% or 2% milk (hey, go wild, it's Thanksgiving)
4 tablespoons of agave nectar
1 tablespoon Dijon mustard
salt to taste

Directions:
Bring big pot of water to boil.
Toss in sweet potatoes. Carefully, please!
Boil till soft (about 15 minutes).
Drain water, leaving potatoes in pot. Using hand-mixer, beat potatoes with butter, milk until smooth, then add the agave, mustard and salt. Serve immediately.
Enjoy!

Your recipe looks yummy, Janice, and I'm intrigued by the mustard. If I don't have agave, can I substitute brown rice syrup?

I am a sweet potato lover also, and my mom's recipe is similar to yours. She burns the marshmallows, and yes, I would sneak bits off as a child (certainly not now that I'm a serious adult). She doesn't use pineapple, but sweetens it with maple syrup and pecans... okay, that's enough. Let's go for healthy!

Hooray, one thing I never have to worry about eating too much of is sweet potatoes. I never did like the gooey marshmallow recipe. If I can find it, though, my niece has a healthy almost edible variation....
