Thanksgiving Leftovers: The Big-Fat Guilt-Free Turkey Sandwich

posted by Janice Taylor, Editor | 8:23am Friday November 28, 2008

Want to eat your Thanksgiving leftovers and “get back on the wagon” at the same time?
I realize that the day after is almost, if not more fun, than Thanksgiving Day itself! After all, you’ve been looking forward to that relaxed time when you can curl up with your big-fat-Turkey sandwich! Haven’t you?
Goodness knows, Our Lady of Weight Loss does not want to deny you the pleasure of a big-fat Turkey sandwich!
Here are a few of my favorite Day-After Thanksgiving Our Lady of Weight Loss approved Sandwich Recipes!
TURKEY BACON CLUB. NO joke! Use fat-free mayo and turkey bacon with your leftover turkey and serve up a Turkey Bacon Club sandwich.
OPEN HAM SANDWICH. Thinly sliced ham followed by a nice dollop of Dijon mustard, topped with a thin slice of reduced-fat cheese on a fat slice of whole-wheat toast. Pop it in the toaster-oven. Watch cheese melt. Eat. Enjoy!
WHITE EGGS AND HAM (or TURKEY) OMELETTE. Use egg whites as your base for a ham or turkey omelet. Be sure to toss in a bunch of crunchy, colorful veggies! Want to add some of that low-fat cheese? Go for it! And now place it on a thin slice of your favorite bread.
TURKEY (or HAM) PIZZA. Get yourself a thin-crust pizza (Boboli makes a good one), sprinkle on bits of turkey and/or ham, a little of that cheese. Some of those crunchy veggies. Wowzer!
What are your favorite day-after Thanksgiving sandwiches?

My favorite day after Thanksgiving sandwich:
Alternate layers of:
turkey, cranberry sauce, stuffing, mashed potatoes on Challah bread.
Okay, it’s not OLofWL approved, but it sure is good!

I am relatively stuffed. Could have done worse; could have done better.
What’s important to note though, is that at the end of the day, there are no desserts left. Just some bread and turkey. So turkey sandwiches today and then I’m ready to re-enter my healthy lifestyle until Christmas Eve!!! Not so bad.
Thanks for the reality check.

It’s all about the ham where I’m concerned! Mustard, gravy, cranberry sauce – they are all wonderful on top! And I’m happy to say I only gained 1 pound this year! Thanks Our Lady, a toast to you and your help.

I love the turkey sandwiches! They are fast and easy and you can eat them cold. Perfect recipe for Thanksgiving leftovers.
There are lots of more things you can do with those leftovers (if you have a lot of them). I.e. the Turkey Pistachio Taco Salad (yummy!!) or my favorite the Turkey Burger. All low fat, off course!
Did you know that turkey is one of the leanest meats around? It’s only the gravy, that makes it so bad.
