Dr. Seuss Birthday: Green Eggs and Ham Recipe!

It’s a YUM MONDAY!!!!… Snowing like MAD in NYC and it’s Dr. Seuss’s birthday! What an awesome combo.In honor of the great Dr. Seuss here follows my infamous GREEN EGGS n’ HAM Recipe! (See below for more recipe links to a variety of recession proof meals and more!!!)Green Eggs and Hamà la Our Lady of Weight Loss who Leaves No Moss!as she Walks Her Talk!Ingredients: non-stick spray * 4 slices of Ham * 1 egg * 4 egg whites * 1 tablespoon Skim Milk * 1 drop of green food coloring! * salt n’ pepper to tasteDirections: Spray non-stick on large frying pan * heat over medium heat * toss ham slices on pan and brown until edges are slightly crisp * Remove ham from the pan * set aside. … THEN: in a medium sized mixing bowl, combine: eggs, milk, salt and pepper. * Beat with whisk until frothy. * Add drop of green food coloring (or two depending on how green you want to make it!) * Spray pan again; heat. * Add egg mixture to pan. * Stir the egg mixture with a spatula. Yup, scramble ‘em! * Transfer eggs to plate. * Place ham on plate! * Serve with whole wheat toast and orange juice! Yum! Thanks for reminding me how fun this recipe is! How about adding a dose of “health” by using organic eggs, spinach for the ‘green’ eggs and maybe even some uncured ham!!! NOW we’re talking!

We had green eggs and ham today too! Pesto is a nice alternative to food coloring. My son and I loved it!

My favorite dish is fried eggs with Iberico ham and French potatoes. So, whenever I see a delicious recipe like this one, I like to use the Spanish ham called jamoniberico de bellota.
