Astrological Sweet Spot: 100 Calorie Peach Cobbler (Recipe)

ART FUEL STOP.jpgGet ready for three weeks of “sweet spot” living! In today’s Fresh Living blog, Holly Leibowitz Rossi shared this week’s Taurus horoscope from Rob Brezsny’s Free Will Astrology site.
Bottom line: For the next three weeks, Taureans will be living in a “sweet spot.” All that is melodious, graceful, delicious and aromatic will be theirs! Happy to say that Taurus is my sign, too!
In an effort to share the “sweet spot” with y’all, I am offering up my Peachy Keen Vintage Cobbler Recipe (from my book: All Is Forgiven, Move On!).
It serves two; 100 calories per serving! How sweet is that? And it hits the spot!!!
Enjoy!
Sweet Spot: Peachy Keen Cobbler
Ingredients:
1 1/2 cups peach slices
2 tablespoons peach nectar
1 teaspoon brown sugar
1 teaspoon mint, finely chopped
1 Social Tea cookie, crumbled
Instructions:
Preheat oven to 375 degrees F.
In a small bowl, combine the peach slices, peach nectar, sugar, and mint. Toss to combine
Pour the peach mixture into a small baking dish. Top it with the crumbled cookie.
Bake the cobbler for 20 minutes until bubbly.
