Is Cinco de Mayo (the 5th of May) the Mexican Independence Day? Actually no. Mexico declared its independence from Spain on midnight, the 15th of September, 1810. It took an additional 11 years before the first Spanish soldiers were forced to leave. Cinco de Mayo, The Fifth Of May, commemorates the victory of the Mexicans over the French army at The Battle Of Puebla in 1862.
It is one of my favorite food holidays! Here follows two of my best Our Lady of Weight Loss approved Cinco de Mayo recipes. A bit tweaked, but still celebratory! Enjoy!!!

Onion, Cheese and Sausage Quesadillas
Ingredients:
3 medium sweet onions, finely chopped
1 tablespoon butter
6 garlic cloves, minced
3/4 pound turkey sausage
1-1/2 cups (6 ounces) shredded Swiss cheese, divided
8 corn tortillas (8 inches)

Preheat oven to 425 degrees. While preheating …
In a large skillet, cook onions in butter over medium heat until tender. Add garlic. Stirring frequently, cook for approximately 20 minutes or until the onions are golden brown and begin to caramelize! Remove from skillet. Keep warm.
In the same skillet that is infused with the great taste of caramelized onion and garlic, cook turkey sausage until cooked through.
In a large bowl, combine the turkey sauce, 3/4 cup Swiss cheese and onion mixture.
Place corn tortillas on two greased baking sheets; sprinkle each with 1 tablespoon Swiss cheese. Top with sausage mixture, and remaining cheese and tortillas.
Bake at 425° for 12-15 minutes or until golden brown. Cut each quesadilla into six wedges. Serve immediately.

Black Bean ‘n Corn Salsa (serve with baked tortilla chips!)
Ingredients:
2 cans (15-1/4 ounces each) whole kernel corn, drained
2 cans (15 ounces each) black beans, rinsed and drained
1 can (15 ounces) plum tomatoes
1 medium red onion, chopped
3/4 cup minced fresh cilantro
4 jalapeno peppers, seeded and chopped
1/4 cup lime juice, freshly squeezed
1/2 teaspoon salt
Tortilla chips (baked!)
Directions:
In a very large bowl, combine the first eight ingredients. Cover and refrigerate until serving. Serve with tortilla chips. Make a lot!!!
