National Vanilla Pudding Day: Chill. Serve. Smile. (recipe included)

In celebration of this sweet milk-based dessert, I am offering up one of Our Lady of Weight Loss’s best dishes from her “Decadent Delish Diet” recipe collection! Chances are, you’ve got all the ingredients already!
Vanilla Pudding, Plainly Perfect
Ingredients:
2 cups of 2% milk (or 1% or fat free)
1/3 cup organic sugar
3 tablespoons cornstarch
a pinch of salt
a splash of vanilla extract
1 tablespoon organic butter
Instructions: In a medium saucepan over medium heat, heat milk until it begins to bubble around the edges. * In a medium sized bowl, combine sugar, cornstarch and salt. * Pour hot milk in a little at a time; stirring, dissolving, stirring. * Put your ‘cooking intuition hat on,’ and stir and cook until it is thick enough to look like heavy cream. * Do not boil! * Remove from heat and stir in vanilla and butter. * Pour into serving dishes.
Chill. Serve. Smile.
