Last week, I did a segment for Better.tv and along with some fabulous tips on summer weight loss, I offered up my two best gazpacho recipes. It was great fun. While you’re whipping up a great healthy summer batch of gazpacho, watch the video! Yum it up!Red GazpachoIngredients15 oz. can diced tomatoes, in juice1/4 cup low-fat vegetable broth organic3 med. tomatoes, peeled, seeded & choppedjuice from fresh lemon2 cloves garlic, dicedpepper to tastehot sauce to taste1 med. cucumber, peeled and finely chopped1 med. yellow bell pepper, finely chopped1/3 c. minced green onionsInstructionsCombine first 7 ingredients in container of electric blender; process till smooth. Combine tomato mixture, chopped cucumber, yellow bell pepper, and green onions; chill thoroughly. To serve, ladle soup into chilled bowls.White GazpachoIngredients3 medium cucumbers, peeled, seeded and chopped6 cloves garlic, minced2 cups (16 oz.) sour cream (reduced fat)1 cup (8 oz.) low-fat yogurt1 cup (8 ozs.) low-fat vegetable broth, organicsalt and pepper to tastea splash of Tabasco saucegarnish with slivered almonds and seedless green grapes, halvedInstructionsToss all ingredients (except for almonds and grapes) into your food processor or blender. You might want to do this in batches. Pour batches into bowl and refrigerate overnight.
