Cook with Me Friday: Arabic Lamb Stew

Some friends are coming over on election night for dinner and, together, we will tune into the election results. What to serve? This dish must cover all possibilities … something that will either be celebratory in nature – or – so delicious that it will make the elections results palatable!
At first I was stirring towards a chicken dish, but as we head toward Thanksgiving, I thought let’s go easy on the ‘fowl.’ I dug into my files and remembered that my Arabic Lamb Stew is easy to make – an easy clean up – and a 5 Yum dish if ever there was one!
So – without further ado – from the 5 YUM Our Lady of Weight Loss kitchens, I give to you -
Arabic Lamb Stew
Ingredients:
3 tablespoons olive oil, divided
1 lb. lamb stew meat, cut into bite-sized pieces
Salt and pepper
2 cups organic chicken broth
1 large yellow onion, chopped
1 15 oz. can stewed tomatoes, drained
1/4 cup basmati rice, rinsed
2 tablespoons baharat
Instructions
Heat 1 tablespoon of olive oil in large pan over high heat
Sprinkle lamb with salt and pepper, not too much – not too little
Brown lamb in oil, stirring for about 8 minutes.
Place lamb in a bowl.
Reduce heat under pan to medium-high.
Add 1 tablespoon olive oil
Add yellow onion and1/4 cup broth, stirring for about 10 minutes.
Return meat to pan and sprinkle with baharat*.
Add rest of broth to pan.
Stir in tomatoes, rice and return to a boil.
While it is cooking …
… preheat oven to 375 degrees.
When preheated …
Spoon stew into a loaf pan, cover with foil and bake 1 hour.
Transfer the stew onto beautiful serving plate.
5 Yum – All-in-One Meal
*Baharat is a blend of allspice, pepper, cinnamon, coriander, nutmeg, cloves and sometimes cardamom, cumin and paprika. It is popular in the Middle East and Turkey. The Turkish version includes a bit of mint and savory. Try this tongue-tingling spice in your stews or pilafs!

I love stew made food Janice.Mine is different kind of stew recipe,it’s our very own Filipino style stew,very simple to prepare and very good especially during cold winter weather.i so love to prepare stew for my girls during winter here in California,and the batchoy vegetable on it is very good source of my bone sustainance.I dont have good posture Janice,my back bones aren’t good,lol,since i was young i do suspect for scoliosis,lol.thanks God i can still walk like straight normal,lol but im not!My dad knows about that too,lol,im totally out of his genes,Janice,lol as in T-o-t-a-l-ly,lol.
