Cook with Me Friday: Classic Potato Salad

Imagine, if you will, an Our Lady of Weight Loss approved comfort food! This Classic Potato Salad recipe will wow you and your guests. For the full Zen experience, practice deep breaths while you chop, cube and mix!
CLASSIC POTATO SALAD
This recipe can be prepared in larger quantities by doubling or tripling the ingredients.
Ingredients:
3 cups white potatoes, peeled, cooked and cut into 1-inch cubes
1/2 cup finely chopped celery
1/4 cup sweet pickle relish
1/4 cup sliced scallions
1 Tbsp (fig – my favorite) balsamic vinegar
1 Tbsp finely chopped fresh dill
2 tsps Dijon mustard
Salt n’ pepper to taste
In a large bowl, combine all the ingredients, mixing well. Chill in the refrigerator for at least 2 hours, to allow flavors to evolve, before serving.
Makes 4 Servings.
Approximately 180 calories per serving! Enjoy!!!

I Love potato salad Janice,but i can’t eat that much,when i do eat,
i eat only small portion,that’s it!Daddy’s always on my mind when i eat any food,ah,i just can’t get him off my mind,Janice.My daddy’e like a wellness program hooked in my mind,lol,but anyway,Janice,of course i do accept his concerns and role as my dad,you know,he’s been a responsible dad ever since i was born in this place,sometimes i wonder if all dad’s are all like my dad,very,very caring.Thanks janice,small portion is approved to eat just to taste any food recipe,big plate is a no,no to my dad and he’s closely watchin,janice,lol.and i am grateful having a dad who’s like a security health guard to me,lol.thanks.
