Eureka! I’ve found the perfect Thanksgiving pâté recipe! It is an amazingly delicious, traditional dish with a twist.
While traditional pâtés are often made from high-fat meats and liver, this vegetarian version is high on flavor and health, and low on calories! It is the perfect appetizer. Everyone will love it and sing your praises.
Thanksgiving Walnut Pâté
Ingredients
1 large eggplant
1 cup walnut pieces
1 tablespoon fresh ginger root, peeled, grated and finely chopped
3 cloves garlic, mashed
1 tablespoon extra-virgin olive oil
1/8 teaspoon ground allspice
Salt and cayenne pepper to taste
Whole-grain crackers
Instructions
Preheat oven to 450°F.
Place eggplant on baking sheet.
Pierce the eggplant with a fork in several places.
Bake until very, very (really – very) soft, about 45 minutes.
While the eggplant is baking, grind the walnuts in a food processor until very fine
Set aside.
Remove the eggplant from oven.
Cut it open, let the steam escape.
Drain off any liquid.
Scrape the pulp into a food processor.
Add ginger root. Garlic. Olive Oil.
Process until smooth.
Then … second round:
Add the ground walnuts and allspice, and process until smooth.
Season to taste with the salt, and cayenne pepper.
Spoon into a small loaf dish and chill several hours. Until firm.
Serve with whole-grain crackers.
