Dysfunctional Chef Friday: Coconut Rice – an alternative to the plain ole same ole

Seriously folks, I know that it may not sound exciting, but trust me – Coconut Rice is beyond exciting; it’s thrilling!!!   A delicious alternative to the hum drum plain boiled rice.  And if brown rice is your thing, that’s fine too.  Brown, white – whatever – just add a bit of coconut and you are cookin!!!

Coconut Rice – (As Cousin Angus would say …. an alternative to the “same ole!! same ole!!!”

Ingredients:

2 cups long grain rice
1 cup water (note the 2:1 ratio – took me a long time to remember that one!)
2 cups, unsweetened coconut milk (if my supermarket has it in the can, yours does too)
a pinch of salt
2 tablespoons organic granulated sugar
fresh shredded coconut, to garnish

Instructions:

Wash the rice in cold water until it runs clear.
Place the water, coconut milk, salt and sugar in a heavy-based saucepan.
Add the rice, cover and bring to boil.
Reduce heat to a simmer for about 20 minutes, give or take, until the rice is tender to the bite and cooked through.
Turn off the heat, allowing the rice to ‘rest’ (after all its hard work) for about 7 minutes (a compromise between 7 and 10).
Put in pretty serving bowl, fluffing it with fork.
Sprinkle a little shredded coconut on top for garnish!

Even though a 1/2 cup (your basic serving size)of rice is 120 calories,
there’s coconut milk in this and a bit of sugar, so it’s more. Approx. 210 calories!!!
True enough! I’ve been calculating for the past hour.   If you get a better calorie count, please weigh-in below!
