Dysfunctional Chef – Sexiest Vegetable of All Time???

As most of you know, ten years ago I permanently removed over 50 pounds with Our Lady of Weight Loss by my side.   Part of my permanent fat removal plan was to ‘fill’ up on life; to get involved in fun activities, think about something other than my next meal.  One of my favorite things to do was to ‘make art about food’ instead of eating it.

My very first WEIGHT LOSS ART series was The Sexy Vegetable Series, and without a doubt the sexiest vegetable of them all is the cucumber!  Specifically the English cucumber, from the “burpless” variety.  Actually, cucumbers are classified into three main varieties:  “slicing”, “pickling”, and “burp-less.”

English cucumbers are sweeter than your basic cuke; they have a thinner skin, are nearly seedless, and are reported to be easily digested.  They can grow as long as 2 feet.  :)   You can find English Cucumbers in grocery markets, shrink-wrapped in plastic.

Here follows one of my all time best cucumber dishes!

The Sexy Cuke: Marinated, Chilled and Served

Ingredients:

2 medium Cucumbers or 1 long English!
1 tablespoon salt
1/2 cup sugar
3/4 cup dry cider
1 tablespoon cider vinegar
3 tablespoons chopped fresh dill
pepper to taste

Instructions:

Slice the cucumbers as thin as you can.  Place them in a colander, sprinkle with salt.  Put the colander over a bowl and leave it to drain for about one hour.  Why?  Because it draws out some of the water and makes the cucumber softer and sweeter!  Well worth the effort.

Then, rinse your drained cukes under cold water.  Pat dry with a paper towel.

Slowly, carefully and with love, heat the sugar, cider and vinegar in a small saucepan, until the sugar has dissolved.  Let it cool, while you …

Place ‘patted’ cucumbers in a bowl.  And then, once the cider mix has cooled, slowly pour on cucumbers.  Mix and marinate; allowing your cukes to sit and ‘breathe’ for another 2 hours.

Then … drain the cucumbers, sprinkle with the dill and pepper.
Chill in fridge until ready to serve.

Make a double batch, because it’s going to ‘go’ fast!
