Eat More, Weigh Less: The WALDORF

For those of us who are interested in eating something that tickles our taste buds, satisfies to the point of happy, and fills us up healthy …

… Then this recipe is for you!!!

Our Lady of Weight Loss’s The WALDORF -  better than any other Waldorf Salad – ever!

First, a little history.  The Waldorf Salad was first created at the Waldorf Hotel in New York City, thus the name (duh?).  It is a simple and light salad that was, back in the old days, meant to accompany a heavier main course.

However, given its level of crunch, sweetness and blend of interesting textures, as well as its amped up levels of vitamins and minerals, Our Lady of Weight Loss says, “Yo, make it the main event.”  (FYI … Our Lady of Weight Loss has been watching a lot of Breaking Bad and – yo – she’s starting to sound like Jesse.)

THE WALDORF

Ingredients:

1 cup chopped walnuts
1 cup diced celery
1/2 cup fresh, seedless red grapes
1/2 cup fresh, seedless green grapes
2 red apples, cored and sliced
1/4 cup green onions
3 hard boiled eggs quartered
1/2 cup cooked chicken breast, sliced
Butter Bibb lettuce

Dressing:

2 tbsp lemon juice
6 tbsp mayonnaise
salt n’ pepper to taste

In a large bowl, mix the mayonnaise and lemon juice and season to taste.
Add to bowl:

Walnuts, celery, grapes, apples, onions, eggs and chicken. Mix well.

Plate it:
Artfully arrange Bibb lettuce on plate.   Place 1/2 cup to 1 cup of Waldorf mix on top.
Eat more, weigh less!
