Best Apple Brown Betty Recipe Ever!

Our Lady of Weight Loss: Apple Brown Betty Recipe, Best EverCan you smell the amazing aroma coming from my kitchen? I just whipped up a tray of Apple Brown Betty. I'm so sad that you're not my neighbor and can't popover for an afternoon tea party. Wouldn't that be awesome?!

As a consolation prize, here follows the best Apple Brown Betty recipe ever! FYI ... it's one of the many delicious Our Lady of Weight Loss approved recipes from my book, All Is Forgiven, Move On (required reading for anyone who has lost 'it' and found 'it' more than once).

Apple Brown Betty is an American dessert that dates back to colonial times. A "betty" is baked pudding made with layers of sweetened and spiced fruit and buttered bread crumbs. It's often served with some kind of cream. Not here! Forgetaboutit!

Ingredients:
6 golden delicious apples, sliced
3/4 cup frozen apple juice concentrate
1/2 cup golden raisins
1 teaspoon ground cinnamon
1/3 cup whole-wheat flour
1/3 cup quick oats
3 tablespoons packed dark brown sugar
3 tablespoons buttah!

Instructions:
1. Preheat the oven to 375 degrees F.
2. Coat a medium-size baking dish with nonstick spray. Set it aside.
3. In a large bowl, combine the apples, apple juice concentrate, raisins, cinnamon and three tablespoons of the flour. Spoon the mixture into a baking dish.
4. In a medium bowl, combine the oats, brown sugar, butter and remaining flour. Stir the mixture until it is crumbly. Sprinkle it over the apple mixture.
5. Bake the pudding for 1 hour, or until it is bubbly and golden brown. Serve it warm. YUM!

Back to School: Hungry and Cranky Kids

Love Your Inner Chubby Child.jpgIf you had lunch at 11:30 a.m. (or even earlier) and the next time you had access to food was 3:00 in-the-afternoon, wouldn't you be hungry and cranky, too?

We can't blame our children for wanting to hit those devil-filled vending machines, can we? What can we do to help put and keep our children on the healthy path? Here are some thoughtful tips from Our Lady of Weight Loss.


How to Keep Your Kid Happy and Healthy in the Face of School


1. Ask. Listen. Talk. Sit down with your child and, together, come up with a list of healthy snack options. Respect your child's wishes. Keep the door to healthy living open. Be sure to include some fruits and veggies.

2. Read. Whether your child accompanies you to the grocery store or not; do spend some time reading the nutrition labels and comparing products together. Pay attention to the ingredients, and of course, portion size. Steer away from 'enriched' products and foods that have 'high fructose corn syrup' in them. (Enriched means that everything good has been stripped out, and the manufacturer had to put something back into it less it has no nutritional value and HFCS is simply unhealthy, in my opinion.)

3. Get Real. You don't think your kid, at any age, is going to cut up veggie sticks, make pretty little packages of apple slices (squeeze lemon juice on it to keep fresh), did you? If you want your child to eat healthfully, you are more than likely going to have to make pretty, appealing little packages of food for them to have readily available. (In their lunch boxes and at home, for after school arrival.)

4. Make It Fun. As long as you are in charge of the packaging and promoting of the healthy foods, do so with a touch of humor and creativity. And be age appropriate, please. The younger set might enjoy 'ants on a log' (celery topped with cream cheese and raisin 'ants'), whereas the teenagers might like something more sophisticated like cheese and pear slices.

5. The Swap Meet. Kids often swap snacks, or lunches for that matter. "I'll trade you my healthy 'ants on a log' for your Twinkie." Again ... ask, listen and talk. Find out with whom he or she is trading with and ask permission to call the other parent to discuss trading options.

6. Always Ask Permission. Do you like it when people tell you what to do? I sure don't. No one does. So, ask permission to call the other parent. Don't embarrass your kid. It's worse than eating unhealthy snacks.

7. Feel Good. You did your best to provide healthy foods. As the days, weeks, months and even years pass, you will have effectively provided enough nutrition and healthy living guidance to make a difference.

The Fat Fight: Are you pouring on the pounds?

A Serious Sugar Shout-Out from Our Lady of Weight Loss. According to the American Heart Association (AHA) the average American will munch through, chow down and/or guzzle 22 teaspoons, or 355 calories of sugar today (and tomorrow and the next day)!

For those of you who are thinking, "Not me, I only put 2 teaspoons in my one cup of coffee in the morning," think again!

Sugar is added to - geeze - just about every packaged food out there. Take a look at the labels and word up - if any of these words appear - you are ingesting sugar, big time!

corn sweetener
corn syrup
dextrose glucose
high fructose corn syrup
honey
maltose
malt syrup
molasses
sucrose
syrup

The biggest problem is that we are, on average, consuming 355 calories per day of empty calories that do absolutely nothing for us but rather work against us vs. nutrient rich calories that help us to burn bright and happy throughout the day. Sugar is associated with obesity, having high blood pressure, high levels of triglycerides, and oxidative stress and inflammation.

What to do?
Read labels! At the very least, own up to what you are doing to yourself!
Eliminate soft drinks and other sugar-sweetened beverages. Just one can of soda contains 130 calories and 8 teaspoons of sugar.
Steer clear of process foods! Go Fresh!

The Outer Limits!
The AHA suggests that women consume no more than 6 teaspoons per day (about 100 calories or 25 grams) of added sugar; and men no more than 9 teaspoons (about 150 calories or 37.5 grams).

August 27: Two Moons, Mars and One Chocolate Moon Pie

ART FUEL STOP.jpgIn celebration of tonight's astrological event, "Two Moons," Our Lady of Weight Loss encourages you to gaze upon the midnight sky as Planet Mars, the brightest in our night sky, appears from our earthly perspective to be as large as the full moon and she shares her most sinfully deliciously yet Guilt-Free Moon Pie.

Guilt Free Moon Pie, for those who are craving chocolate but don't want to get weighed-down by the calories and fat!

Ingredients:
Graham Crackers, Low-Fat
1 Small Box of JELL-O Instant SUGAR-FREE/FAT FREE Chocolate Fudge Pudding Mix(4 serving size)
2 Cups of SKIM Milk
6 Egg Whites + 1.5 Teaspoons of Cream of Tartar + 2 Tablespoons of Raw Sugar

Instructions:
Take a sleeve of graham crackers and break, smash and pulverize into crumbs.
Line a pie plate with them! Put aside.
Make the chocolate pudding (follow instructions on box).
Pour chocolate pudding on top of graham cracker crust. Refrigerate until cold.
Beat egg whites with cream of tartar and sugar, vigorously until fluffy.
Add to top of pie.
Put on moon shaped plates and eat as you gaze upon the mysterious 2 moons!
