Dysfunctional Chef: Blackberry Salmon

A 5 YUM Dish!

This week’s Dysfunctional Chef Recipe shines the spotlight on blackberries, a.k.a. “black caps,” an extraordinarily healthy food.  Black Caps are high in antioxidants, a substance that protects the body by neutralizing free radicals or unstable oxygen molecules, which are known to damage cells and are a source of disease and aging.

One cup of blackberries weighs in at approximately 62 calories. They are very low in sodium, very high in dietary fiber, as well as high in manganese, magnesium, potassium and vitamin C.

Blackberries quickly mold when left at room temperature and they last just a couple of days when refrigerated.  Therefore, buy them as you want to eat them, or freeze them!  Simply wash, cut the hulls off, pop into a zip-lock bag, burp the bag (get the air out), and you can have berries for months to come!

And NOW for this week’s RIGHTEOUS RECIPE from your favorite Dysfunctional Chef!

BLACKBERRY SALMON

INGREDIENTS

  • 3/4 cup water
  • 1 cup blackberries
  • 1 (1-inch) piece ginger, peeled and sliced into coin shaped pieces
  • 1 lemon, juice
  • 1/4 cup agave nectar
  • 1 tablespoon olive oil
  • 4 (8-ounce) skinless salmon fillets
  • Salt and freshly ground black pepper

DIRECTIONS

Preheat oven to 400 degrees F.

In a small sauce pot over medium heat, combine water, blackberries, ginger, lemon juice and agave nectar.  Bring to a boil.
Lower the heat to a simmer until the liquid is reduced by half (probably around 20 minutes), stirring occasionally to avoid burning.
Remove from heat and let cool.

Brush a baking sheet with olive oil,  Place salmon fillets on top, and then brush the fillets with oil and season with salt n’ pepper.
After blackberry mixture is cool, pour half of the blackberry mixture on the salmon fillets.  Bake for 4 minutes.

Then place the rest of the blackberry mixture on top.  Change oven setting from Bake to Broil, and broil for 3 minutes.

5 YUMS!!!  Enjoy!

200 Tips Feed Your Soul, Change Your Weight: Week 3 –

Here we go, straight into Week 3 of the  FEED YOUR SOUL: Change Your Weight series (from May through September).  I was initially inspired and motivated to do this because I am leading a workshop at Hollyhock, an absolutely phenomenal wellness center in Canada (just a stones throw away), and the course is entitled … Feed Your Soul: Change Your Weight!!! (of course! what else!!!)

I am further motivated to do so now, because it is quite the challenge.  It’s not as easy as it looks!

I am not even a quarter of the way through the list and there are moments when I have brain freeze!  Will I am be able to create 200 Ways to Feed Your Soul: Change Your Weight to share with you all and with those who attend the workshop???   We’ll see.  In the meantime, please be sure to add your ways to FEED YOUR SOUL to mine!

10 MORE Ways to Feed Your Soul : Change Your Weight (Tips 21 thru 30)

21.   Have Fly-By-the-Seat-of-Your-Pants Fun!  No thinking allowed nor aloud!

22.  Do Not Worry About Your Worries.  It only gets you nowhere twice as fast!

23.   Begin Your Day in Delight; end it in wisdom.

24.   If you want to Be Happy, then Stop … Being Unhappy!

25.   Stimulate Your Immune System.  Go to a museum or attend a concert, a show, the theater, or read! (Studies show that those who are participating in culture events live longer quite possibly because these activities stimulate the immune system.)

The Origins of Birthday Cake

Yes, today is my birthday, and I am celebrating and experiencing it ‘modern day style’ – via social media.  My Facebook page is amass with birthday greetings, which I must say is a splendid way to start the day!  I’ve spent the past hour reading through the birthday wishes, listening to birthday songs, hearing from old friends and new ones alike, and writing thank you notes in kind.

One Facebook Friend suggested that I ‘eat cake,’ another sent me a photo of cake (quite beautiful), which brings me to today’s subject : The Origins of Birthday Cake!   I did a bit of Internet research and here’s what I unearthed!

The Origins of Birthday Cake

A number of historians believe that the birthday cake was first cooked-up in ancient Greece.

The Greeks formed round or moon shaped honey cakes or bread and took them to the Temple of Artemis to honor the Goddess of the Moon. They placed candles on the cake so that it would glow like the moon, and the smoke of the lit candles carried their wishes and prayers to the Gods who lived up above, in the sky.

Others think that the ritual originated in Germany during the Middle Ages. Reportedly, a sweetened dough was made in the shape of the baby Jesus and was used to commemorate his birthday.

Later on – the Kinderfest – birthday celebrations re-emerged in celebration of young children. The Germans placed a large candle in the center of the cake to symbolize ‘the light of life.’

In medieval times, the English placed symbolic objects inside their cakes. Sometimes coins or thimbles were mixed into the batter. The person who bit into the coin was sure to be wealthy, while the poor person who found the thimble would never marry. (Oh my! Imagine that.)

Further, some believed that if the cake fell while baking it was believed an ominous sign and the poor birthday girl or boy was guaranteed an entire year of bad luck.

Today, we believe, that if we blow out all our candles in one breath, our wish will come trueThat being the case, I shall opt for one candle per decade!

Here’s to luscious cakes, sweet dreams and delicious wishes on birthdays and un-birthdays, alike!
