The Sweetest Day: Sweet Potato Steaks

I've got some shocking and sweet news for you!: Sweet potatoes do not belong to the potato family.

The sweet potato is a relative of the Morning Glory (Ipomoea Batatas), and its nutritional makeup is quite different than the white potato.

The sweet potato - a powerhouse of nutrients rich in anti-oxidants - is a first-rate provider of vitamin A and beta-carotene. The sweet potato contains significant amounts of vitamins C and E, is a great source of potassium, is fat and cholesterol free and high in fiber. The sweet potato has a low glycemic index which helps maintain steady blood glucose levels. This overlooked vegetable protects against heart disease, stroke, cancer and delays the progression of Alzheimer's disease.

In 1992, the Center for Science in the Public Interest rated the nutritional value of vegetables. The sweet potato, a simple root vegetable, was rated the most nutritious of all.

Sweet potatoes are a great complement to any type of meat, poultry or fish. Add chunks of sweet potatoes to soups, stews or even chili. Peel or grate raw sweet potatoes into salads. My personal favorite: Start the day with a baked (or microwaved) sweet potato. Top it with low-fat plain yogurt and a little drizzle of honey.

Do not put sweet potatoes in your refrigerator unless they have first been cooked. They will quickly spoil. Best to keep them at room temperature. Coldness and wetness turn the sugars in sweet potatoes and change the taste. Plan on using within one week's time.

Sweet Potato Steaks
Ingredients:
4 medium Sweet Potatoes

Instructions:
Slice Sweet Potatoes lengthwise into 1/4 inch steaks!
Brush with your favorite steak sauce. Let it sit for a bit.
Place on grill or broil. Turn once. When tender and soft eat it! YUM.

Diet Tips and Tasty Tidbits: 15% less in 15 minutes

To boost satiety levels: Eat one fresh, raw, happy apple 15 minutes before a meal!
To boost dessert happiness levels: Bake up these apple chips!

Spicy Apple Chips
Ingredients
* 2 medium apples
* freshly squeezed lime juice
* a dash here and there of cinnamon

Directions
1. Pre-heat oven to 250 °F (120 °C).
2. Slice apples as thin as humanly possible, discarding both ends.
3. Sprinkle with lime juice, place on foil-lined cookie sheet.
3. Sprinkle with a dash of cinnamon (optional)
4. Bake for 2 hours, turning apple slices every half hour.
5. EAT! YUM. Delicious. No kidding. Wow.

Gods, Girls and Artichokes (recipe included)

According to Aegean myth, the first artichoke was a divine young woman who lived on the island of Zinari. One day the Greek god, Zeus, visited his brother Poseidon (God of the Sea). (They were some powerful family.)

Zeus emerged from the sea to discover a beautiful young mortal woman. She did not seem frightened by him or seem to notice that he was a god. Zeus, naturally, took full advantage of the opportunity and seduced her. Her name was Cynara, and it all 'went' so well that he decided to make her a goddess. This would enable her to live near to his home on Mt. Olympus. (Long distance romance was not his thing.)

Cynara agreed. Zeus had a plan. He thought that whenever his wife Hera was away, he'd get together with Cynara. However, Cynara soon became homesick. She missed her mother, so she slipped back to the earth for a short but meaningful visit with the mortals. When she returned, it was quite apparent that she had a new attitude. Zeus wasn't particularly happy with her un-goddess-like behavior. He threw a fit and tossed her back to earth, and he changed her into the plant that we now call the artichoke.

The Modern Day Artichoke:
The artichoke is a part of the thistle group; a member of the sunflower family. The plant can reach heights of three to four feet, and its diameter can cover a six foot area. The "vegetable" we eat is actually the plant's flower bud, and if allowed to flower, a gorgeous violet-blue blossom will present itself.

Artichokes are available twelve months a year, but their peak season is spring and fall. Most artichokes are grown in France, Italy, and Spain, but California farms nearly 100 percent of the United States' crop. Baby artichokes are a smaller version of the larger artichokes. The flowers buds are picked from the lower part of the plant, where they receive less sun, which therefore stunts their growth.

Recent German studies indicate that artichoke extract lowers cholesterol.

Artichoke Salad

Ingredients:
2- 6 ounce cans chunk light tuna in water
1- 16-ounce can artichoke hearts, drained and chopped
1/2 cup chopped black olives
1/3 cup reduced-fat mayonnaise
1 tablespoon lemon juice, fresh
salt and pepper to taste

Instructions: Combine all ingredients in bowl. Mix with enthusiasm. Enjoy!

Best Apple Brown Betty Recipe Ever!

Our Lady of Weight Loss: Apple Brown Betty Recipe, Best EverCan you smell the amazing aroma coming from my kitchen? I just whipped up a tray of Apple Brown Betty. I'm so sad that you're not my neighbor and can't popover for an afternoon tea party. Wouldn't that be awesome?!

As a consolation prize, here follows the best Apple Brown Betty recipe ever! FYI ... it's one of the many delicious Our Lady of Weight Loss approved recipes from my book, All Is Forgiven, Move On (required reading for anyone who has lost 'it' and found 'it' more than once).

Apple Brown Betty is an American dessert that dates back to colonial times. A "betty" is baked pudding made with layers of sweetened and spiced fruit and buttered bread crumbs. It's often served with some kind of cream. Not here! Forgetaboutit!

Ingredients:
6 golden delicious apples, sliced
3/4 cup frozen apple juice concentrate
1/2 cup golden raisins
1 teaspoon ground cinnamon
1/3 cup whole-wheat flour
1/3 cup quick oats
3 tablespoons packed dark brown sugar
3 tablespoons buttah!

Instructions:
1. Preheat the oven to 375 degrees F.
2. Coat a medium-size baking dish with nonstick spray. Set it aside.
3. In a large bowl, combine the apples, apple juice concentrate, raisins, cinnamon and three tablespoons of the flour. Spoon the mixture into a baking dish.
4. In a medium bowl, combine the oats, brown sugar, butter and remaining flour. Stir the mixture until it is crumbly. Sprinkle it over the apple mixture.
5. Bake the pudding for 1 hour, or until it is bubbly and golden brown. Serve it warm. YUM!

Grey's Anatomy: Seviche or Ceviche either way, delicious! (recipe included)

Did you watch Grey's Anatomy last night? I did. And I have to say, I really thought the seviche/ceviche comment about the poor girl who was mangled was tasteless (HA! pun intended) and just plain dumb.

Nevertheless, it did bring Ceviche to mind ... a delicious dish that is low in calories, carbs and fat. Something you might want to order the next time you're dining out!

Ceviche (also spelled cebiche or seviche) is a seafood dish that is marinated in a citrus-based mixture, lemons and limes being the most commonly used. In addition to adding a fresh flavor and bite to the dish, the citric acid causes the proteins in the fish to become 'denatured,' which pickles or 'cooks' the fish without heat. This low carb, low calorie dish (approximately 175 per cup) is bursting with flavor, absolutely de-lish, totally satisfying and is 100% guilt-free.

It is popular in mainly Latin American countries such as Peru, Panama, Ecuador, Mexico, Guatemala, Columbia and Chile. Both finfish and shellfish are sued; finfish is typically raw (denatured as described above), while the shellfish is typically cooked.

While Peru is often noted as the birthplace of ceviche, each country puts its own touch on the dish by adding a variety of garnishes. In Peru, ceviche is served with slices of cold sweet potatoes or corn-on-the-cob. In Ecuador, it is accompanied by popcorn, nuts or corn nuts.

If you'd like to give it a try at home, here's a to-die-for recipe!
Ceviche a la Our Lady of Weight Loss

Ingredients: 2 pounds tilapia fillets, cubed * 10 garlic cloves, chopped * 2 tablespoons fresh cilantro, chopped * 1 rocoto (Peruvian hot pepper) seeded and chopped * Salt n' pepper to taste * Juice from 12-15 limes, freshly squeezed, strained. Enough to cover fish!!! * 1 red onion, thinly sliced and rinsed

Directions: Combine all ingredients except red onion and mix well. * Place red onion on top and let it marinate in the refrigerator for at least 3 hours before serving. * Before serving, mix well with slices of cold sweet potato and corn nuts.
