This one is a favorite in my house. It’s a staple for game day Sunday or when on a tight budget. Make it your own, and use refried beans, lentils, sliced green pepper, or salmon. I don’t fry my eggs, simply because I love baking them. I also mix the eggs to pour over the ingredients. This is not your traditional huevos rancheros recipe, rather it is my inspired take on a class dish.
Ashley’s GF Baked Huevos Rancheros:
Ingredients
- 4 (GF) corn tortillas
- 1 cup Black Beans
- 4 eggs
- 1/2 cup vegan/gluten free cheese of choice
- 1 cup of mixed cut vegetables
- 1/2 cup salsa
- Seasonings of your choice. Mine are chili pepper, garlic seasoning, and black pepper
Directions:
Crack and mix eggs in separate bowl, set aside.
Spray olive oil pam in a glass baking dish.
Layer beans, vegetables, seasonings, corn tortillas, pour eggs over top, then layer the cheese.
Bake in the oven for approx 40 minutes at 350.
Remove the dish from the oven, serve with salsa and greek yogurt if you desire!

I love that your gluten-free recipes are also vegetarian, this saves the animals AND the planet. I am going to try this dish with refriend beans.
